OLMOS PARK — At new dining spot Evo Contemporary Mexican Cuisine, chef Arturo Fernandez and his team want to serve contemporary Mexican dishes that tell stories.

“You can get a taste of his food, then you can really taste and feel the passion that he has for his craft,” said Adolfo Martinez III, general manager.

The restaurant opened Nov. 8 at 218 E. Olmos Drive in the spot formerly occupied by Chez Vatel Bistro. Fernandez also co-owns Spoon Eatery in Castle Hills.

Fernandez learned his craft in Mexico City at the Ambrosía Culinary Center, a gastronomy school.

Fernandez, a native of Mexico, has worked in several high-profile restaurants.

“He’s trying to make a footprint in the States and we’re lucky enough to have him select San Antonio to be the city for him to do that in,” Martinez said.

Evo – short – for – Evolution – features an eight-course tasting menu using indigenous ingredients from Mexico. They include the ensalada yecapixtla, a salad with salt-cured beef, and the pesca del día, or fish of the day.

Diners can add pairings for an extra cost.

Patrons can watch through a glass window as Fernandez and his team create the meals.

“(It’s) just kind of a work of art,” Martinez said.

Each tasting lasts about two hours, with plenty of time to sip, savor and socialize. There are two seatings a night, with up to 30 spots available.

Reservations are preferred.

Hours are 5 to 10 p.m. Tuesday through Thursday, 5 to 11 p.m. Friday and Saturday, and closed Sunday and Monday.
