FAIR OAKS RANCH — While the father-daughter duo who recently opened Spotted Deer Coffee Co. may be new to the area, they’re no strangers to a cup of joe.
“It’s always kind of been my dream to open up a coffee shop. We used to live in Seattle and there’s obviously a coffee culture out there,” said 19-year-old Gabby Giles, who partnered with dad, Sean.
The shop debuted April 3 at 8000 Fair Oaks Parkway, Suite 2102. Sean Giles’ brother, Adam, and father, Tim, helped get the business brewing.
In addition to regular coffee, also offered are espressos, lattes and cold brewed. Drinks can be served with dairy alternatives soy, almond, oat and coconut milk.
The shop’s name is derived from the town’s many deer.
“I really love everything about coffee, it’s so flexible,” said Gabby Giles, who is pursuing a business degree at Northwest Vista College. “You can do so many different drinks, hot or cold, different flavors, different milks — so many ways you can serve it.”
Coffee, to her, is art.
The Vienna beans supplied from San Francisco are roasted locally by What’s Brewing? The shop brews a medium roast, which has a subtle taste and no sharp bitterness, Sean Giles said.
“We’re very proud that we’re working within San Antonio, with all of their resources, to make a good cup of coffee and that is what’s important to us,” he added.
Other beverages include tea, lemonade, Element Kombucha and Red Bull Italian sodas.
The store’s sweet treats are made in-house by dad, who has a culinary-arts degree although he’s been in the mortgage business for 20-plus years.
“My dad’s passion has always been cooking and baking,” Gabby Giles said.
Menu items include scones in four flavors, muffins, cookies, bagels, quiche, salads, plus breakfast and after-morning sandwiches.
Hours are 6 a.m. to 7 p.m. weekdays, 7 a.m. to 7 p.m. Saturday, and 8 a.m. to 5 p.m. Sunday.
