
HILL COUNTRY VILLAGE — The couple behind Meadow Neighborhood Eatery & Bar want to create an inviting space with a menu using seasonal ingredients.
Patrick (who goes by PJ) and Lindsey Edwards opened the restaurant in September at 555 W. Bitters Road, Suite 110, in The Alley on Bitters. Prior eateries in that locale include Tre Enoteca and Bin 555.
PJ Edwards is the former culinary director for Contigo and its parent company, Edgewise in Austin. Lindsey Edwards served as general manager of the Jason Dady Restaurant Group.
“We just kind of saw San Antonio as an opportunity and that it’s a growing market, but by no means is it over-saturated yet,” PJ Edwards said.
Meadow creates dishes featuring a Texas and Southern flair, with ingredients that come directly from farmers and ranchers.
Fried chicken, burgers and Dean & Peeler Meatworks ribeye are staples. Sides and other items will change.
“Everything tastes the best when it’s the right season,” Lindsey Edwards said. “It’s PJ’s job to highlight what those farmers are out there doing.”
Sundays are for brunch with steak and egg pizza, wood-oven French toast and more. Vegan and vegetarian options, specialty cocktails, wine and beer are available.
Happy hour is from 5 to 7 p.m. Tuesday through Friday. Dining hours are 5-10 p.m. Tuesday through Saturday and 10 a.m. to 2 p.m. Sunday.
