Seeking a healthier diet led Colin Bjorgo to create Evergreen Organic Restaurant, which serves 100 percent organic dishes along with vegan and gluten-free choices.

“We wanted to be a little more unique on the food side and change the game a little,” Bjorgo said.

Evergreen, located at 523 Med Court, Suite 102, in Stone Oak, held a July 1 grand opening.

The menu offers a variety of what Bjorgo calls fresh, scratch-made options from family recipes.

Selections include salads, pizzas, smoothies, sandwiches and burgers.

Favorites include the cheesy lasagna and the gluten-free pizza.

“Honestly, it’ll probably be the best pizza you’ve had.”

Bjorgo invites diners to enjoy Evergreen’s “fun and relaxed environment.”

The aim is to make customers as comfortable as possible while savoring a meal.

For a small corking fee, patrons can bring their own alcoholic beverages.

At press time, the owner had a lot on his plate — working on a patio, looking for local musicians and starting a “What Makes You Happy” wall for customers to jot down things they enjoy.

Discounts are available for first responders, plus active-duty and retired military.

Hours are 11 a.m. to 10 p.m. Monday through Thursday, 11 a.m. to 11 p.m. Friday and Saturday, and 11 a.m. to 9 p.m. Sunday.
