After visiting the East and West coasts, Eric Chan brought what he learned to San Antonio to help create Rolling Fish Sushi Burrito and Poké.

Since Rolling Fish opened Aug. 5, the pace has been hectic but exciting, the co-owner said.

The Pacific island-themed eatery is at 12730 Interstate 10 West, Suite 304.

“I am happy that everyone who has come here has given great feedback,” Chan said. “We have been getting lines out the door and I read the reviews online that say that it is worth the wait to try something like this.”

Signature poké salads include the Hawaiian Classic, which comes with ahi tuna, cucumber, red onion, masago, pineapple, avocado and a classic house sauce; the Ninja, a dish with chicken breast, romaine lettuce, cucumber, red onion, carrot, corn, sweet chili and spicy ginger; and the Samurai, filled with salmon, romaine lettuce, cucumber, red onion, carrot, mango, seaweed salad, sriracha aioli and wasabi aioli.

Also on the menu are poké bowls, served with sushi and organic brown rice. In addition, the giant sushi burrito keeps customers coming back, Chan said.

“The fusion is what intrigues everyone … They have had sushi before, but not a sushi burrito,” Chan said.

There are also teas, slushies and other drinks.

Hours are 11 a.m. to 9 p.m. Monday through Thursday, 11 a.m. to 10 p.m. Friday and Saturday, and noon to 9:30 p.m. Sunday.
