Bottling Department — Pearl’s new food hall — hopes to tantalize patrons’ taste buds with a variety of culinary treats.

“It’s encouraging experimentation on both sides of the counter, both for the operator but also the diner,” said Elizabeth Fauerso, Pearl’s chief marketing officer.

Bottling Department, which contains several eateries under one roof, opened July 24 at 312 Pearl Parkway, Building 6.

It sits on the site of the Pearl Brewery’s original bottling facility, built in the 1880s but destroyed by a fire in 2003. The old design inspired the food hall; the cornerstones and nameplate were salvaged after the blaze.

Tenants include Bud’s Southern Rotisserie, Fletcher’s Hamburgers, Maybelle’s Donuts, Tenko Ramen, The Bar at Bottling Department and The Good Kind.

“It fits as being a culinary hub, as being something that’s approachable and accessible, and it encourages entrepreneurship and community engagement,” Fauerso said.

Bud’s Southern Rotisserie comes from Pieter and Susan Sypesteyn of Cookhouse A New Orleans Restaurant and NOLA Brunch & Beignets, and features Southern comfort food from deep in the heart of Louisiana.

Tenko Ramen is a ramen bar by Quealy Watson, formerly of The Monterey and Hot Joy, along with business partner Jennifer Dobbertin.

Fletcher’s Hamburgers is a venture from Sergio Remolina, serving burgers on brioche buns from Tribeca Ovens in New York.

Maybelle’s Donuts is a gourmet doughnut shop from the minds behind Bakery Lorraine, operated by owners Anne Ng and Jeremy Mandrell, along with Charlie Biedenharn.

The Bar at Bottling Department serves wine and beer in a partnership with High Street Wine Co., a Pearl tenant.

The Good Kind is a modern market from Tim McDiarmid of Tim The Girl, a culinary company that does catering, event planning and more. This is her first brick-and-mortar venture.

Both Maybelle’s Donuts and The Good Kind are open for breakfast.

Hours are 7 a.m. to 9 p.m. Sunday through Thursday and 7 a.m. to 10 p.m. Friday and Saturday.
